The client classes in the SDK can be subclassed (with the exception of the S3 client, as you've noticed), but if you are simply attempting to use the services there is no need to do so. You can simply instantiate a client class - replace Foo in your case with AmazonS3Client - and make all the required calls.
While this is an issue with the current version of the SDK, you can try our Developer Preview, which will not have this issue. The source for the new version is also available here.
