The answer hits me five minutes after I post this. :))
So we should set only ONE of app or extension when calling originate. I had set both, and Stasis only used the app value, ignoring whatever extension was there. Removing app: ... finally made channel.dialplan.exten appear as intended.
I had hoped that setting both would ensure that calls would always reach my node code. Anyhow, problem solved. Sorry for the noob-post!
