Extract training code as a Trainer class instance for testable code about dalm HOT 6 CLOSED

take the functional approach of breaking down code into multiple functions
Feel free to update the class structure as well, but please do take this approach. The functions are far too large to be testable right now, and I'd like this repo to be closer to a real python package than a "research only" repo.

See #33 for some more changes happening. might be worth branching off of this, or waiting for it to be merged
