I think depending on the use case both behaviors make sense, I'll probably add a configuration to give you control to choose.

I've added a new configuration to the GridifyMapper that you can use to prevent throwing exceptions if you had unmapped fields. IgnoreNotMappedFields
Also, feel free to feedback if you had any suggestions

this feature is available in version v2.3.2
.
also, I change the error in case you had unmapped fields, instead of GridifyFilteringException
it throws GridifyMapperException
.
