@adamhwang just confirmed it - DateTimeOffset fails to render OpenApi definition.
@justinyoo I request re-opening the issue.

Investigated the issue and found out that the code goes into infinite recursion in ToOpenApiSchema in OpenApiSchemaExtensions.
DateTimeOffset is considered non-simple type and it's properties are iterated. It has Now property, which is of course the DateTimeOffset type and the infinite recursion is over there.
