Sorry, that is outside the scope of this gem. That is an email message header construct. Check out the mail gem. Mail::Parsers::AddressListsParser seems like a good start

It's no pretty but I ended doing this:
EmailAddress.new(Mail::Address.new("John Doe <[email protected]>").address)
from email_address.
